This winter, Marion asked us to imagine a unique preparation using yuzu from her plantation. We were able to work from fresh fruit, just harvested.
Yuzu is a citrus fruit native to Asia, mainly grown in Japan and Korea. Resulting from the crossing of a variety of lemon and a mandarin, the yuzu resembles a small grapefruit. A sought-after citrus fruit with a unique taste and strong acidity.
