Date cake and mascarpone cream

Date and olive oil cake, served with a mascarpone cream and a dab of our lavender honey and roasted coffee preparation

Ingredients for a cake - about 8 people

  • 250g dates (weighed with pits)
  • 250ml boiling water
  • 210g flour
  • 80g brown sugar
  • 85ml olive oil
  • 85ml of milk (or plant-based milk)
  • 8g baking powder (2 teaspoons)
  • 1 teaspoon of baking soda - optional
  •  

    Mascarpone cream

  • 120g of mascarpone
  • 120 cream 30% fat
  • 30g icing sugar
  •  

  • lavender honey and roasted coffee preparation
  •  

    1° / Wash the dates, then pit them. Place them in a medium-sized bowl that will accommodate all the ingredients for the cake. Cover them with 250ml of boiling water and add a teaspoon of baking soda. Leave to rest for 5 min.

    2° / Then mix the dates without removing the water, directly in the mixing bowl, until you obtain a very supple preparation.

    3° / Add the flour, sugar, olive oil, milk and baking powder. You can mix at each step. If you haven't added the baking soda to the dates, add a pinch of salt.

    4° / Pour the dough obtained into a greased cake mold. And bake for 45-50min in a preheated oven at 180°C.

    5° / Leave the cake to cool for 20-30min so that its consistency is perfect.

    6° / In a bowl, beat the crème fraîche and the icing sugar until fairly thick peaks appear. Then add the mascarpone and beat again until smooth.

    7° / For dressing, place a generous tablespoon of cream on a slice of cake. Then make a small nest in the center of the cream with the back of the spoon. Add a dab of lavender honey and roasted coffee preparation

    **note : 
you can replace the mascarpone cream with whipped cream for a quicker version.
