Egg sando

Ingredients for 2 sandwiches

  • 4 slices of soft bread 
  • 3 eggs
  • 3 tbsp mayonnaise 
  • 1 tsp rice vinegar
  • 2 tsp mountain honey and lemon drop chilli
  • a bunch of spring onions
  • fried onions
  •  

    1° / Cook the eggs in boiling water for 9min then plunge them into a bowl of iced water to stop the cooking. Adding a little vinegar to the water is a good tip to prevent the eggs from cracking.

    2° / In a salad bowl, roughly crush the eggs with the back of a fork. Add the mayonnaise, rice vinegar, honey and lemon drop chilli and a handful of chopped spring onions. Mix everything together.

    3° / Spread a little butter on one side of each slice of soft bread. This forms a barrier so that the bread does not become damp. Add the filling - you have to be very generous - between two buttered slices. Place in the fridge for 30min.

    4° / Wrap each sandwich in baking paper then slice it in two with a very sharp knife. Add on top a little spring onions, a little fried onions and add an extra drizzle of honey and lemon drop chilli just before serving.
